An ECI Dutch Oven is the right tool for the cooking challenges you face--even down to the Staub 26 cm you selected--but making it work is another story altogether. The solution is not to buy another pot--ECI, copper, disc, cladded, or even shiny silver. It might be the right kind of induction hob.
I own both All Clad d5 and Thermo Clad--often having trouble choosing between them. If you go Demeyere for a pan, I'd suggest that you consider the 11" pro line 7 pli with helper handle (sometimes sold as Atlantis). I think you should purchase at least one Dutch Oven for one pot meals.

It's supposed to be 'no name brand' but commercial quality cookware. How does it compare to , say, All-Clad, which I have some of and like , just dont feel like shelling out $100 every time I want or need a new fry pan or sauce pan. Was looking at some Cuisinart on eBay when I spotted this NSF stuff, which is also on Amazon and other sites.

Another method would be to make a mold, and cast them. Zinc gives off fumes when overheated which can cause metal fume fever. This is a big subject in my blacksmithing forum . It has lead to some deaths over the years. Drinking milk does not stop it. Soldering should not be a problem, but be careful when casting not to breath the fumes.
Does anyone have experience using an oyster holder like this one? My husband needs to shuck 200 oysters on Christmas day. He's shucked fresh oysters once before and had a really hard time opening them with just an oyster knife and glove.
