Tin lining - need retinning? - Cookware - Copper - Chowhound

Upon removing the caramel, I noticed a shiny spot on the bottom. It is also rough whereas the rest of the lining is smooth. I see no copper poking through. Have I just removed some build-up on the tin that will recover, or did I damage the tin and need to have it retinned? Thank you for your help.

I own both All Clad d5 and Thermo Clad--often having trouble choosing between them. If you go Demeyere for a pan, I'd suggest that you consider the 11" pro line 7 pli with helper handle (sometimes sold as Atlantis). I think you should purchase at least one Dutch Oven for one pot meals.

It sounded intriguing to some, but joethesmith bought another pan, and no user ultimately responded. This, IMO, is where this should have ended. Except Franz replied, not as a user, or even a CenturyLife life product evaluator.

How much aluminum to equal copper? - Cookware - Aluminum ...

Hi, Hiracer: It's somewhat complicated. The *conductivity* difference will remain constant, regardless of thickness. I think the physical properties of *thermal diffusivity* and *thermal effusivity* of the two materials need to be considered as better comparative measures of how even and responsive pans made of the two metals are.
