Part of that obsession requires that I try to revisit my stance on olive oil. So. I'm looking to give another shot at olive oil and I'm open to suggestions. I'm not looking to make a vinaigrette or a balsamic vinegar/olive oil bread dip out of it: it will most commonly be used as a potential replacement to grapeseed oil in various applications.
I am always somewhat overwhelmed by the choices of olive oil in speciality shops and thought I'd post this to the board to see what brands/regions/countries produce the best olive oil for dipping. Any particular process that's better? My personal fave right now is Fini.
I am not a small operator :-) doing over $1 mil in food purchases annually. My Sysco rep was very good and made an effort to learn what my business challenges were and working with me to find products that met my needs without being totally crap products. Sysco is a ginormous corporate entity and that turns people off. I get that.
i just tried making fudge for the first time tonight--thankfully not for any real reason, just as a test. it's not setting very hard, AND at the same time is sort of grainy. not badly grainy, just tastes like alot of sugar. i tried googling for the answer and apparently if it's too soft it's UNDERcooked, but if it's grainy it's OVERcooked. i've decided to go with undercooked for this one.

We had an interesting experience on my family's first cruise on Carnival when we went about 10 years ago. My parents and I enjoyed the regular menu cruise food, but after the first meal, the maitre d asked if the rest of our group (we were 4 families) would enjoy Indian food more than what was being served to everyone else.

wish i read this before pan-frying a large quantity of escolar and eating it at one in the morning. a friend of mine brought it over, claiming it was her "favorite fish" and that it was "really difficult to find." she has eaten it many times and has never had a reaction. however, my roommate and i have been suffering for 2 days. beware of escolar.

Seabourn took over several ships from the Royal Viking Line, which was their former favorite. I've been on a couple of Crystal cruises and the food is excellent. My all time best trip was on the Royal Viking Queen (which is now the Seabourn Legend). All food was top-notch and included in the price.

It is different from a bacon joint in that it is a different cut, although a bacon joint can be used as a lower quality alternative. Gammon can be smoked or unsmoked.
