the level need to be higher i will admit, i find 30's a little easier to manage against him thanks to his 2 attacks, like they say metal menagerie, as untill you beat him and the second challenge then tartarus training against MKS and LMS are pointless as sthey dont show all that often.

Monsters are indeed not as useful. In DQV you only have the hero and no or very few humans for a good chunk of the game, so monsters are very useful and virtually necessary. In DQVI you have a full party of humans early on, and you can't even recruit monsters until you get jobs, which is a few hours into the game.
Now, they'll randomly join you afterwords, there will be a message that they get back up and wish to join you. The odds of this are random, and only after you become an adult. It's less of catching in a Pokemon sence (seeing as this is basically the precursor to said game), and more like beating them down and if you're lucky enough to recruit them.
You can then return to fight the monster again and you will be given the option again to recruit the monster. The battles are the same as before you had a team, but at the end of a battle with a "visible monster" (aka "infamous monster") you will have the option to recruit the monster you just defeated.
