Your first chance to get Ae is from the Echinopsae in the swamp in chapter 2 (possibly from the 4 or 5 in the cave in chapter 1, but I don't think they re-appear when killed), followed by Cockatrices in the swamp cave during chapter 3, and finally from Alps / Bruxae during chapters 4 and 5 (in crypts and the swamp cemetery, respectively).
