I keep seeing commercials for avoiding having to clean sticky, baked on messes by lining baking pans with foil. And now, Martha Stewart's foible of not liking foil to touch her food has resulted in a parchment paper/aluminum foil hybrid.
Upon removing the caramel, I noticed a shiny spot on the bottom. It is also rough whereas the rest of the lining is smooth. I see no copper poking through. Have I just removed some build-up on the tin that will recover, or did I damage the tin and need to have it retinned? Thank you for your help.

I have watched my mother cook A LOT in the kitchen since I was a child and continued to do so as I grew older. I never really thought much about cooking techniques and specialised cookware (specialised meaning how one type of pan/pot is more suitable for certain types of food types and dishes than others)
Titanium is light and strong (and trendy), but it is a lousy thermal conductor. It has roughly 1/4 the conductivity of cast iron, which isn't much. 1/10 that of aluminum, 1/20 that of copper. If you compare specific heat capacities (heat holding ability), titanium is excellent, better than cast iron, but a little over half that of aluminum.

I own both All Clad d5 and Thermo Clad--often having trouble choosing between them. If you go Demeyere for a pan, I'd suggest that you consider the 11" pro line 7 pli with helper handle (sometimes sold as Atlantis). I think you should purchase at least one Dutch Oven for one pot meals.
