Just leave it out, but source as many of the other authentic ingredients as possible. Fish sauce does provide some flavor, but mostly salt. I was a more strict vegetarian in the past, and that was my tactic--and I think my kimchi is pretty fine without seafood additions.

As much as I would love to be snobby about my palate for fish, and as much as I want to be responsible about eating fish caught from the sea rather than that raised in a fish farm and fed some sort of colorant to turn the meat the expected pink hue, I find myself actually loving the flavor of farmed atlantic salmon and farmed steelhead that I have been buying from Costco.

Having spent a short time in Kerala, the Kerala Market caught my eye while I was wandering around Montrose looking for that Hungarian restaurant I remembered (turned out to be Magyar Csarda, now out of business). It was closed so I wasn t able to check it out carefully but I think it is just a small food market with no prepared foods.
If you want to experience true Kerala food, then I would strongly recommend finding an authentic Kerala restaurant instead of South indian restaurant. I strongly believe, the so called South indian restaurants cannot do justice to the food.
