My husband and I are in the process of buying our first house. The kitchen leaves much to be desired but we went in expecting to buy new countertops and -most important - a new stove/range. But today during the inspection we realized that the current range is a downdraft-type - i.e. it is vented down through the cooktop, not up through a range ...
About us: we cook almost every day, but we've always dealt with low-end ranges in rental units. We make jam, beer, can tomato sauce, you name it. The 36" will be a dream for our big canning pots. But we simply can't afford the Capital or a blue star. Looking forward to the wisdom of the group. We need to make a decision quickly. Thanks!

I have watched my mother cook A LOT in the kitchen since I was a child and continued to do so as I grew older. I never really thought much about cooking techniques and specialised cookware (specialised meaning how one type of pan/pot is more suitable for certain types of food types and dishes than others)
I own both All Clad d5 and Thermo Clad--often having trouble choosing between them. If you go Demeyere for a pan, I'd suggest that you consider the 11" pro line 7 pli with helper handle (sometimes sold as Atlantis). I think you should purchase at least one Dutch Oven for one pot meals.
Titanium is light and strong (and trendy), but it is a lousy thermal conductor. It has roughly 1/4 the conductivity of cast iron, which isn't much. 1/10 that of aluminum, 1/20 that of copper. If you compare specific heat capacities (heat holding ability), titanium is excellent, better than cast iron, but a little over half that of aluminum.
With oil and gas prices soaring, more Americans are using wood-burning stoves to heat their homes — but owners can be in big trouble if they aren't careful.
